Penne pasta with vegetable-meatball sauce

For 3-4 persons (sufficient for 2 adults & 2 children)

  • 500g penne pasta
  • 350g carrots
  • A bunch of spring onions
  • A tin of sliced pizza tomatoes
  • 500g mixed minced meat
  • A tsp of oil
  • Salt, pepper, herbs
  1. Cook the pasta until it is al dente.
  2. Spice the minced meat as you like, and form little pieces of it.
  3. Put minced meat in a pan without oil and brown all over.
  4. Clean the carrots and spring onions. Cut them in small pieces.
  5. Braise the vegetables lightly in oil.
  6. Add the tomatoes (and if you like, add also some water).
  7. Season as desired with salt, pepper and herbs.
  8. Add the meat balls and warm them.
  9. Serve everything with the pasta.

Tastes great with green salad.
