Vegetable noodle casserole


For 4 persons

  • 500-600g vegetable (fennel, carrots, cauliflower)
  • 250g noodles
  • A tin of chopped pizza tomatoes
  • 200ml vegetable stock
  • 125ml soya
  • Salt, pepper, garlic, herbs
  1. Cook the noodles until they are al dente, drain them.
  2. Cut the vegetables into equally large pieces.
  3. Simmer it in butter, add the pizza tomatoes, vegetable stock and soya.
  4. Season with spices and herbs.
  5. Mix the noodles with the vegetable sauce and put it in a soufflé dish.
  6. Bake in the oven for approx. 20 minutes at 160°C.
