New potatoes with fresh asparagus and shrimps


For 4 persons

  • 12 new potatoes
  • 12 asparagus stems
  • 400g shrimps
  • 1 onion
  • 2 garlic cloves
  • Half a cup of crème fraîche (natural or with herbs)
  • Juice of a lemon
  • Tarragon, salt, pepper, oil
  1. Wash potatoes and boil in jackets.
  2. Peel asparagus, cut crosswise into pieces approx. 4 cm long and cook in boiling salt water.
  3. Sear the shrimps in little oil.
  4. Add the asparagus, finely diced onions and chopped garlic, sweat it until translucent.
  5. Add the small chopped tarragon, deglaze with lemon juice and let it boil down.
  6. Stir in the Crème Fraîche, let it melt and season to taste again.
