Swabian pockets with peppers vegetables

For 4 persons

  • 600g swabian pockets
  • 300g red bell peppers
  • 300g yellow bell peppers
  • 150g zucchini
  • 100g onions
  • 200g tomatoes
  • 2 gralic cloves
  • 1 tsp of tomato purée
  • Oil
  • 1 tbsp paprika powder
  • Salt, pepper, basil
  1. Prepare the swabian pockets according to the package instructions.
  2. Trim, wash and dice bell peppers, tomatoes and zucchini.
  3. Peel the onions and garlic cloves. Chop them finely.
  4. Braise lightly onions, garlic and bell peppers in hot oil.
  5. Add zucchini and sauté briefly together.
  6. Stir in the paprika powder and tomato purée. Sweat it briefly.
  7. Pour in 1/8 litre of pasta water. Salt and pepper the vegetables.
  8. Fold in the tomato cubes and simmer them for 5 minutes at low heat.
  9. Serve and sprinkle with basil.
