Fast vegetable-bulgur stir fry

For 4 persons

  • 150g bulgur
  • 300ml vegetable stock
  • 1 onion
  • 400g parsnips
  • 400g carrots
  • Butter
  1. Peel the onion, dice and sauté in butter.
  2. Add the bulgur and hot vegetable stock. Simmer it for about 10 minutes.
  3. Peel the carrots and parsnips. Cut them into equally large pieces.
  4. Sauté the veggies in hot butter.
  5. Stir in the bulgur.
  6. Season well with herbs and spices.
