Indian vegetable rice

For 4 persons

  • 240g rice
  • 4 spring onions
  • 4 carrots
  • 400g mandarins (canned)
  • 500ml vegetable stock
  • Salt, pepper, curry powder, paprika, ginger
  1. Cook the rice.
  2. Cut the spring onions into rings, cut the carrots into slices. Brown them in oil.
  3. Add the vegetable stock. Cover and let it simmer for approx. 10 minutes.
  4. Add the rice and drained mandarins. Let get them hot.
  5. Season with the spices.
